Hope everyone’s doing well! I’ve been super busy planning Isaac’s birthday party. I really can’t believe that he’ll be 3 on Friday. As crazy as things have been, I was able to fit in grocery shopping yesterday so that we can stay on track with healthy eating. Last night I made spaghetti…one of Isaac’s favorite!
He’s a messy spaghetti eater…and I’m so thankful to have a dog that waits for Isaac’s fallen noodles
. I didn’t have enough spaghetti for a full night of leftovers, so I decided to use it in his lunch.
- Spaghetti – I’m still working on a good homemade sauce recipe. This one came out pretty good. I added a lot of basil, thyme, oregano, and rosemary from the herb garden. I also added a chopped bell pepper into the sauce. Instead of making meatballs, I always make a meat sauce. Not sure why…I guess it’s just easier.
I made it with whole wheat angel hair pasta.
- Watermelon – I bought a little, seedless watermelon and chopped it into little chunks. He loved it! It really is such a nice cold treat in this heat.
- Cookies – Yes, I actually packed cookies this time. He really loves cookies. So I limit the amount that I buy and don’t make it a daily thing. While shopping, this time I chose the Gerber Arrowroot ones and only packed 3.
- Skim milk – Break from juice today. I used a metal thermos, which really helps to keep it cold and at a safe temperature.
