Brrr! Well, it definitely feels like Christmas in New Orleans! We put up our Christmas tree this past weekend and it’s been in the 40′s for the last two days. I love this time of year
Last night I made black bean burgers for Meatless Monday, and they are the perfect size for Isaac. So instead of planning for dinner leftovers, I planned for lunch. Here’s a peek at Isaac’s lunch for today.
- Black Bean Burgers -Last night I served the burgers with guacamole. I didn’t think it would hold up too well for him today though. Instead I served it with mayo and cheese.
- Goldfish – Out of the prepackaged little snacks out there, I like goldfish…I must admit. I’m definitely not fond of all the flavors out there (like pizza…barf). But we found these cute little space themed ones.
The first thing I would think when I look at these is “fake food!” but looking at the ingredients, it’s not bad. No food dyes and “natural flavors” listed. That makes me happy
Plus, love the little shapes!
- Raisins – We haven’t bought these in awhile. He goes through phases of liking raisins and disliking them. Today the entire little box came back home. I’ll still try occasionally. What a healthy snack!
- 100% Apple Juice – His favorite type of juice

Hello, love the blog. I was just wondering if you have ever heard of arsenic in apple juice? There was recentley an article in the Cincinnati Enquirer about it. I’m not sure of the exact day, but it was this past week. I’ll keep reading though, very much on board with the nutrition quest!!
Thanks for stopping by, Erica. I have heard about it but honestly, have not done all the research. Personally, I don’t doubt that there is arsenic in the juice…just like there is arsenic in other foods that come from the ground. I don’t necessarily restrict that one specifically, but I do restrict juice overall to about 6 oz per day. Although apple juice is his favorite, I always mix it up for variety.
And no, I don’t have a juicer but I did ask Santa for one! And thank you for bringing that up

Looks like a yummy lunch! How do your black bean burgers turn out? I tried them once (the recipe from the Meatless Monday website) and they never firmed up or anything. Hmmm.

Juicing is such a great idea! I did throughout my childhood and it gave me a whole new love for my fruits and veggies that I would have thought to overlook the importance as a child. This does look like a great lunch since unfortunetly the thought of a school lunch makes me cringe these days. Great way to keep lunch interesting for children and I agree goldfish are a great item for a lunch box no matter how old you are!
