Animal Crackers

I hope everyone had a great weekend! We did…and also had a great end to last week. On Thursday, Isaac and his class went to the New Orleans Children’s Museum for a field trip. I haven’t been since I was a kid! I had a lot of fun as well :) . My favorite parts of the museum were the grocery store and the café. Of course they would be, considering that I’m obsessed with all things food. haha. I love play food! He had a lot of fun grocery shopping and ringing his foods up. It was funny because in the cafe, he kept serving me food in random baskets with serving size utensils.

We packed a big lunch to share for the day, including cookies. Isaac loves cookies. Not sure if I mentioned it before, but he does. However, I don’t like to keep them in the house all the time or bring them for snacks everyday. That being said, I modified a recipe from All Recipes for animal crackers that are pretty healthy.These are a great little snack that are high in fiber and not too sweet.

Ingredients

½ cup rolled oats

¾ cup whole wheat flour

¼ teaspoon baking soda

¼ tsp salt

2 tsp brown sugar

2 Tbsp butter

¼ cup olive oil

¼ plain yogurt

1 tsp vanilla extract

1 Tbsp honey

You’ll also need animal cookie cutters (or anything of the sort). Of course you’re always welcome to find any small cookie cutters. I looked at a couple different stores until I found some little Noah’s Ark themed ones from Michael’s (a craft store).

First, preheat the oven to 400°. Next, place the oats into a food processor or blender and grind until fine. In a medium bowl, mix together the blended oats, flour, baking soda, salt, and brown sugar. Next add the butter. Use a pastry blender or a knife to cut until the lumps are smaller than peas. Stir in the yogurt, honey, and vanilla extract to form a stiff dough.

On a lightly floured surface, roll the dough out to about 1/8 inch thickness. Cut into desired shapes using cookie cutter. Place them about ½ inch apart onto a cookie sheet (I used a baking stone).

Don’t mind my weathered baking stone! Bake them for 5-7 minutes until the edges are lightly browned. Remove from sheet to cool on wire racks.

Enjoy! As I said before, these are not very sweet but they were taste tested and approved by Isaac :) . Also, they’re not crunchy like regular animal crackers. Although I baked these closer to 7 minutes and they came out with a crisp.

  2. These are adorable! I’ve never seen homemade animal crackers before. I usually buy them from trader joe’s but I really want to try making these with my daughter once she’s a little older. Thanks for including me in your blog roll- I’m honored!
