Homemade Guacamole

Hi everyone! How was your weekend? Ours was pretty relaxing. We went to my inlaws’ house yesterday where we ate some crawfish etouffee and a yummy salad. Today I decided to make something simple-fajitas. I spent the whole day cleaning and hubby was out cutting the grass in the miserable heat, so we didn’t even grill. Told you we kept it simple-just sauteed the chicken, onions, bell peppers in the pan with some seasonings. I did, however, decide to make guacamole. I’ve been playing around with different recipes until I finally came up with my own.

Ingredients

1 avocado

1/2 onion

1 small tomato

1 lime

1 Tbsp chopped cilantro

1/2 tsp salt

1/4 tsp black pepper

Peel and dice avocado. In small bowl, mash avocado using fork. Dice tomato and onion, and add to mashed avocado. Mix well using fork. I even use a potato masher sometimes to mash both the avocado and tomato. Squeeze lime into mixture. Add cilantro and seasonings. Continue to mix well until it reaches a good consistency.Enjoy!

I love guacamole, and so do my boys! I add it to salads, as well as tacos and fajitas. We also make it often for dips when we have company. I prefer adding jalapeƱos, but have to keep it mild with Isaac still. He even thinks mustard is spicy :) .

    I like those as well, Kasey! Very convenient and you don’t have to worry about it going black because the serving size is perfect. They taste really good and fresh as well, unlike “guacamole dips” that are sold in the stores.
